Glad I found this place! OK Gonna lay my favorite stuffed mushroom recipe on ya.
Ingredients:
1 pint of Sour cream
2 cups shredded sharp cheddar cheese
1 can of stuffed baby shrimp
1 each red orange and yellow bell pepper
Green onions
1 pack of sliced Swiss Cheese
enough Portobella mushrooms to cover the bottom of your 13×9 baking pan
Slice the peppers and green onions and stir together the stuffing with everything but the swiss cheese in it together.
Remove stems from mushrooms and sit them to the side and cover the bottom with mushroom caps stem side up. Spoon in the mix generously, and put the stems in between the mushrooms or in a pile in the corner. Cover the entire top with a layer of swiss cheese.
Bake at 400 for 35-40 minutes or until the swiss melts over the whole thing creating a golden brown cap on top that holds it together. ENJOY!

SIMPLE FRENCH ONION SOUP:
(This is for one serving, multiply ammounts by the number of people you have for dinner)
-One large sweet onion
-2tbs butter (or margarine)
-1/4 cup red wine
-1 cup stock (beef or vegetable, i’ve done it with mushroom stock and it’s very good)
-2 cloves garlic
-Sprig of fresh thyme
-Salt and pepper to taste
OPTIONAL:
-Crusty french bread
-Cheese (gruyere or something similar that melts well)
Slice your onions thinly and drop them in a pot with the butter and a pinch of salt. Cook on medium low heat stirring often until very soft and caramel brown. This will take quite some time but it is essential that the onions are as cooked as you can get them without burning.
Mince the garlic and add to pot with the thyme and pepper, stirring until fragrant.
Pour in red wine and scrape the bottom of the pan to lift any cooked on bits and simmer until the wine is nearly gone
Add stock and bring to a simmer. Season to taste, then serve.
OPTIONAL CROUTONS:
Distribute soup into oven safe bowls
Slice bread into a shape that caps off bowls well, you may need to add some bits of bread until it’s entirely covered
Top the bread with grated cheese in a thick layer
Place bowls onto a sheet pan and set under the broiler of your oven. Leave at least 2 inches between the element and the top of the bowls and watch them carefully so they do not burn. Pull them out when the cheese is melted into a solid layer and slightly browned.
Enjoy! This is my goto dinner when i want to make something fancy, it’s very easy and the smell of caramelizing onions will have every member of your house coming in to say “that smells so good”. Ideal meal to impress a guest (or a date!) You do not need to use expensive wine but do not use “cooking wine”, get the cheapest box or can you can find. If you need to avoid wine for health or religious reasons it can be omitted.
